The 2021 growing season commenced with a dry spring characterized by typical growing conditions. However, summer ushered in unprecedented heat, making it the hottest growing year ever recorded. This sweltering summer resulted in crop yields reduced to 25-50% of our initial spring estimates. Despite the challenges posed by the arid, hot, and low-yield season, the 2021 vintage yielded wines with remarkable density, flavor, and structure.

SHW Founding Vineyard, a cornerstone in the history of Seven Hills Winery and a pivotal force in shaping the viticulture of Walla Walla Valley, boasts the distinction of being the first significant planting of Merlot and Cabernet Sauvignon in the region. Established by the McClellan family in the early 1980s, these original vines have consistently produced highly regarded Merlot and Cabernet Sauvignon for over three decades. Celebrating our 34th vintage in 2021, this outstanding Cabernet Sauvignon is 100% sourced from the winery’s estate founding Cabernet Sauvignon blocks. The grapes are destemmed, lightly crushed into open top fermenters, and aged for 22 months in 50% new French oak barrels (225L). Lightly filtered and vegan, this wine is a reflection of the enduring legacy and vision that have significantly contributed to the region’s renowned viticultural landscape
This Old Vine Cabernet has a dark garnet color with aromatics of blackberries, black cherries, cigar box, and hints of currants. The palate presents a medium-plus-bodied wine framed by firm tannins and bright acidity. Flavors of blackberries, Bing cherries, white peppercorns, leather, and warmed baking spice combine with hints of dried tobacco leaves and bramble. Hold for 4-10 years before enjoying this wine with an excellent Grilled Tri-Tip, Leg of Lamb, Wild Boar Ragu, or even Ratatouille.

McClellan Estate Vineyard lies at the southern edge of the Walla Walla Valley, adjacent to the founding blocks of our Seven Hills Winery estate vineyard. This vineyard was established by the McClellan family in 2003, employing varietals, clones, trellising systems, and vineyard practices most ideally suited to this specific site. Following over thirty years of working the land in this region of Walla Walla Valley and nearly two decades of farming this site, we see its uniqueness in this vineyard-designate bottling.
This wine showcases a deep garnet hue, exuding aromas of ripe black cherry and plums, complemented by the earthiness of dried tobacco. Delicate undertones of juniper berry, bramble, and the richness of black forest cake add layers of complexity to the bouquet. Its velvety texture unfolds into a medium-plus body, underpinned by firm yet smooth tannins. The palate is treated to a symphony of flavors, including luscious black cherry, ripe black currants, and the sophisticated essence of a cigar box, with subtle hints of black pepper and vanilla bean throughout.

For over three decades, Seven Hills Winery has been at the forefront of Bordeaux varietal cultivation, expertly bottling all six varietals to highlight the distinct nuances of each variety. Pioneers in the Walla Walla Valley, we boast over fifteen years of Malbec production, priding ourselves as the first local winery to harness the varietal’s potential. We believe the valley’s southern edge uniquely fosters Malbec’s development, thanks to an ideal mix of ample heat and cool evenings that enhance the grapes’ aromatics and structure. Our commitment to quality is reflected in our 100% Malbec, cultivated from fan-trained vines at McClellan Estate Vineyard. Employing open top fermentation and aging the wine in 35% new 500L Hungarian oak puncheons for 16 months, we ensure a lightly filtered, exquisite offering. The 2022 vintage unfolded under challenging conditions, with a delayed start and a cool, wet spring reducing Growing Degree Days to unprecedented lows. However, a turn to warmer weather in the summer and fall months allowed for optimal ripening, leading to a meticulously scheduled harvest across multiple dates in October. This careful approach guarantees a Malbec of unmatched balance and complexity, truly embodying the exceptional terroir of the Walla Walla Valley.
The deep ruby-purple color catches your eye as it enters the glass. Aromas of muddled marionberry explode from the glass with underlying notes of cardamom, and leather. While the aromas lead your thoughts down a path of spiced berry cobbler, your palate is engulfed by juicy texture and velvety flavors of red plums and blackberry compote, unlaying flavors of pink peppercorns and pipe tobacco, all wrapped around medium tannins and medium acidity. Pair with lamb kebabs with roasted Peppers and mushrooms, three bean chili, chimichurri grilled flank steak.
