2019 Vintage Growing Season

The 2019 vintage season started late following a long winter; with snow on the ground into early March. Pruning of the vines was delayed by about a month creating a busy spring in the vineyards. Spring’s weather was normal; the growing season began good flowering and set in the vineyards followed by a moderate summer with minimal heat spikes. While moderate, summer average growing temperatures were slightly above the 20-year average, which continued into a cool September, helping create expressive flavor, color, and acidity in the wines.

The first fruit was in the winery on the 3rd of September with the last lot being brought in on the 20th of October. Harvest came to an abrupt end in early to mid-October due to hard frosts. The 2019 vintage produced wines of excellent flavor, color and structure for most varietals. Sites with lower crop levels and warmer conditions fared very well. The standouts for Seven Hills in this vintage were Whites, Roses, and most Bordeaux varietals.

Seven Hills Winery SHW Founding Vineyard Walla Walla Valley Cabernet Sauvignon

2019 Founding Vineyard Cabernet Sauvignon

This is the wine that started it all. First produced back in 1988 from 8 year old vines,
we’re proud to now share our 31st vintage from 40 year old vines. Our Estate Founding Vineyard is the oldest production vineyard in Walla Walla AVA. This is our flagship Cabernet Sauvignon showcasing the elegance and strength that Walla Walla Valley produces in fine wines. The mild summer and cool September provided great flavor, color, and acidity. Our blocks of Cabernet Sauvignon were hand-picked on October 18th.

Dark garnet in color with aromatics of blackberries, red currants, cherry cordial and hints of wet earth. The palate presents a medium plus bodied wine framed by firm tannins. Flavors of blackberries, marionberries, peppercorns and cinnamon stick are accented by hints of black tea leaves and
vanilla bean. 100% Cabernet Sauvignon. Enjoy this wine with a nice grilled tri-tip, herb roast lamb or Portabella mushroom fajitas. This wine can be enjoyed now and over the next 10 years.


2019 McClellan Estate Cabernet Sauvignon
Walla Walla Valley

McClellan Estate Vineyard lies at the southern edge of the Walla Walla Valley, adjacent to the
founding blocks of our Seven Hills Winery estate vineyard. This vineyard was established by
the McClellan family in 2003, employing varietals, clones, trellising systems, and vineyard
practices most ideally suited to this specific site. The McClellan Estate Cabernet Sauvignon was hand-picked on October 7th, 11th, & 17th, while the Petit Verdot was harvested on October 15th.

Deep ruby in color with aromas of black cherry, fig, peppercorns with subtle
notes of cardamon, graphite, cocoa powder, and fresh herbs. The lush texture leads to a
medium body and flavors of black cherry, marionberries, and cocoa powder, cinnamon
stick, and cardamom seeds on the finish. 96% Cabernet Sauvignon, 4% Petit Verdot. Pairs well with braised short ribs, lamb chops, or mushroom rosti. Enjoy now and over the next 10+ years.

Seven Hills Winery Cabernet Franc

2019 Cabernet Franc
Walla Walla Valley

This wine is grown in the southern hills of Summit View Vineyard and the volcanic-laced silt loams of our estate vineyard, two of the most intriguing Cabernet Franc sites in the Walla Walla Valley. It is always delightful for blending, but as the years have gone by, we have become more and more enchanted with it as a remarkable stand-alone wine. Our Cabernet Franc blocks were hand harvested on September 20th & October 1st.

Ruby in color with aromas of cherry, tobacco leaf, graphite, pink peppercorns, and sage. On the palate, the entry is bright with cherries, raspberries, dark chocolate, and dried herbs framed by soft integrated tannins. 100% Cabernet Franc. Warm olives with feta cheese and a French baguette would make for a great pairing alongside this wine. Enjoy now and over the next 4-6 years.
